Abstract:Difference of H-FABP mRNA transcription of Longissimus dorsi in Laiwu pigs and Duroc weighted about 100kg were detected by fluorescence quantitative RT-PCR. And its relationship with meat quality was analyzed. The result indicated that the H-FABP expression of Laiwu pigs was higher 38.60% than it of Duroc, and perhaps it was related with the fact that IMF of Laiwu pigs were significantly higher than it of Duroc pigs(P<0.01). The correlation between the H-FABP expression with IMF and pH were positive, with diameter of musclur fiber negative, and with marble score and meat color were not consistent in Laiwu pigs and Duroc. Thereinto, the correlation coefficients between the H-FABP expression with IMF were highest, 0.363 and 0.934, respectively. Therefore study of H-FABP can not only increase the IMF content, but increase pH and decrease diameter of musclur fiber.
